Avocados-tasty, healthy and your key to great prizes

Shhh! Don’t tell my kids but avocados are actually healthy. A serving of avocados will provide your kiddos with potassium, fiber, folate, and vitamins C, E, and B-complex vitamins.  I add avocados to soups, salads, sandwiches and dips mostly because I love the taste, but it’s nice to know that they also promote memory and brain function.
 One of my family's favorite avocado recipes is this salsa that I based on one by Paula Deen. 

 


 Black Bean and Corn Salsa 

Prep Time: 20 min (best when chilled over night)

Ingredients

  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (17-ounce) package frozen whole kernel corn- thawed or 2 cans  of corn
  • 4-6 roma tomatoes, seeded and diced
  • 1-2 large avocado, peeled and diced
  • 1 small red onion, diced
  • 1/8 to 1/4 cup chopped fresh cilantro leaves (optional)
  • ¼ cup lime juice
  • ¼ cup red wine vinegar
  • Salt and pepper
  • Dash of red pepper
  • 1-2 garlic cloves minced

Directions

Mix all ingredients thoroughly in a large bowl. Cover and chill overnight. Taste and add salt, pepper or more lime juice as necessary. . I've used lemon juice in a pinch and once used a bottle of Paul Newman's light lime salad dressing. Serve with tortilla chips as an appetizer, or with grilled chicken breast. If no one is watching, you can eat it straight out of the bowl.

There are lots of great prizes and chances to win.  In addition to the grand prize winner, nine runners up will also win an HD Camcorder, a Nintendo 3D and a personalized Mini Chef jacket.
All videos must be submitted by December 4th. Then check back on December 6th to see if your video is one of 10 finalists. Public voting will take place on YouTube December 6-11. The video with the most Likes wins and will be posted on the website December 12th.
