The kids aren't huge fans of eating healthy. So I went searching for something fun and found this recipe at DisneyFamily.com. I figured kids like anything that comes w/ dip and luckily I was right-huge success! (For the record I also tried some Greek style ones-epic fail and so not blogworthy)
Meatballs:
1 lb. ground turkey
2 scallions-finely chopped
1 Tb. Sesame oil
2 Tb soy sauce
1 beaten egg or 1/4 cup egg substitute
optional 1/4 cup chopped fresh parsley
Dipping sauce:
1/4 cup splenda
1/4 cup soy sauce
2 Tb rice vinegar
Preheat oven to 400. Mix all the meatball ingredients with your hands and form into Tb sized balls. Bake on lightly greased cookie sheet for 20-25 minutes. Serve with dipping sauce.
