Artichoke Wonton Cups

A few years ago I was in a dinner club w/ a few other couples.  We would take turns hosting and picking a theme (desserts, German, Mexican, Italian, salads etc.) Each couple would bring a dish and then a copy of the recipe for the other couples to take home. I don't actually love to cook, but it was a fun excuse to hang out w/ great people and eat great food.  One of our themes was appetizers.  My friend Heidi brought these.


Ingredients:
1 Cup grated Parmesan Cheese
1 Cup Mayo
1/2 tsp Onion Powder
1/2 tsp Garlic powder
2 cups Mozzarella Cheese
14 oz canned Artichoke hearts drain and chopped
1 package Won ton Wrappers (I used egg roll wrappers and cut them in 4)
I also added a few Tb or red onion and a crushed garlic clove
Optional: chopped banana peppers or green chillies
Coat one side of wrappers with non-stick cooking spray. Press greased side down into a min-muffin cup.  Bake @ 350 for 5 minutes.  While they are baking, mix remaining ingredients.  Fill each cup w/ 1 Tb of mixture and return to oven.  Bake 5-6 more minutes.  Serve warm

  1. Oh - this is so on my short list of things to make this week! First off, I love anything in a won ton wrapper but the fact that these aren't fried is HUGE!! Thanks for linking up to Foodie Friday.
