This was my favorite cake when I was little. I think I requested it every year. I made it a few years for my daughter, and now she requests in every year. It's pretty simple, but makes a really big impact.
Ingredients:
Yellow cake
1 can frozen lemonade
1/2 gallon vanilla ice cream
1 large cool whip
red food coloring (optional)
Mix up a yellow cake mix and bake in 2 round cake pans. Let cool.
Mix the ice cream with 1/2 of the lemonade. You can add food coloring to make it more pink. Line a round cake pan w/ wax paper and add the ice cream. Return to freezer until it's hard.
Mix the Cool Whip w/ the remaining lemonade to make your frosting.
Place the ice cream layer between the cake layer and frost. Return to freezer.
Variation. My son wanted a chocolate ice cream cake. I used chocolate cake topped w/ a little Hershey's syrup, and cookies and cream ice cream. I added a little cocoa powder to the Cool Whip. It was so easy and so yummy.
