Now it's your turn to link up and I could really use some inspiration.    I've got the summer lazy's and haven't been super productive.  I really need some good vegetarian recipes (I'm starting a 30 day vegetarian challenge on Friday).

  3. Hi Tara,
    My family ate the majority of vegetarian meals when I was growing up. My mom's staple vegetarian recipe is beans & rice. Sounds kind of boring, but it's easy, cheap, and actually really good. First you make rice (you can make whatever kind you want; lately my mom has been making half rice mixed with half quinoa), black beans (we just open two cans and heat them up) and corn (we just use frozen corn and heat it up). Serve with salsa and don't forget the avocado!! You can also add sour cream and cheese. We usually have it with some sort of salad or vegetable. It is so easy and quick to make, and really healthy. Even my dad and husband, the family carnivores, like it!
