Oktober fest Day 4- Gurken Salat

  • 2 large cucumbers
  • 1/2 red onion (finely chopped)
  • 2 tablespoons cider vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup sour cream
  • optional: you can also add a little dill or parsley but I'm not a fan and prefer it plain
Cut the cucumbers and thin as possible. Mix everything in a bowl except the sour cream.  Le marinate at least 30 minutes.  Right before serving, add the sour cream.

This is really good w/ garden fresh cucumbers (nice of me to say that now that it's November?-just pin it until next summer).
